We choose slow fattening process. In this type of cattle, fast fattening in the last life cycle doesn´t provide the fineness, taste or quality we are looking for. This fact is obvious in the fat. 

Maturation
The maturation of meat is a natural process, which main objective is to break intramuscular fiber, obtaining lower resistance to bite. In this process there are 5 factors to takeinto consideration. The combination of these is the perfect formula that only a good AFINADOR DE CARNE can get.
