‘Rabbit : a meat of choice’

 

Originating from Northern Africa of the Iberian penisula, nowadays one can find it in all of Europe, in America and in the South Sea Islands. It was much appreciated by the ancient Romans and was domesticated during the middle ages.

Numerous breeds of rabbit were chosen for the quality of their meat. The rabbit of Garenne is the rustic breed of all the domestic rabbits, including dwarf rabbits. Smaller than the hare, which has brown meat,the Garenne has a clear and tastier meat than that of the clapier rabbit.

The Garenne rabbit is cooked like the hare, meaning that is is essentially casseroled or stewed. Its meat can equally be used for the preparation of terrines.

In the past it was a dish for the poor, nowadays rabbit is a dish that has learnt how to seduce even the top chefs!
